In Bob Lindsay went one step further and set up Six Degrees North brewery at the back of the pub, the first Scottish brewery specialising in Belgian-style beers. Of course, if the beer is very good at these small operations, they often need to move out in order to expand, and that is what has happened recently at Six Degrees North. But the new brewery is only two streets away, so I feel justified in continuing to include it. Here the flagship beer St Mungo, a golden, moderately bitter lager, is also occasionally available unfiltered under the name Wild West, with a fuller mouthfeel and more spicy aroma.

The deep copper Munich Red is a chewy, caramelly lager. The beer hall is modern and free of tacky Bavarian cliches, except at Oktoberfest time. Outside, the beer garden with its big wooden tables gets extremely busy when the sun comes out.

This small brewery, hidden behind the smart hotel in the twee little town of Bridge of Allan, has played more of a role in the beer revival than might be immediately obvious. The tiny bar is festooned with old labels and posters, both their own and from other local breweries.

If you can afford it, the food is exquisite. There were once many pubs run on the Gothenburg principles: The tiny, cramped brewery can be seen from the bar. The Clockwork was pioneering in its time as one of the first breweries in Scotland to use the piney, resiny American hops which are everywhere nowadays.
